Macallan produces full-bodied whiskies that are distilled in tiny copper stills which influence have a huge influence on the final flavor. Of the distilled spirit only the best 16% is kept for aging. The difference in Macallan whiskies is how long and in what style they are aged interestingly, with the Macallan 12-Year-Old Sherry and the 12-Year-Old Double Cask there are a lot of cross-overs between the two in terms of aging: both spend time in American and European casks, which have previously held sherry, and both are aged for a minimum of 12 years. The Double Cask, though, spends more time in American casks, so does this slight difference really change the flavor? We think so, and with this gift set, you can find out for yourself.
The 12 Year Old Sherry Cask is smooth and fragrant, with flavors of fruitcake sweetness and smoke from the sherry casks leading the way to notes of ginger, vanilla, and fruit. The 12-Year-Old Double Cask is, rich and sweet it has flavors of raisin, caramel, wood smoke, and oak, with slight floral citrus notes and a lingering oaked finish.
In tasting the Double Cask it is lighter and slightly sweeter than its Sherry counterpart, there is also a floral note, which isn't apparent in the Sherry cask. For anyone with an interest in whisky, it's a chance to find out how a slight change in cask style can turn around the flavor of a whisky, but they are both excellent, so if tasting notes aren’t your thing, pour yourself a dram, sit back and enjoy.
